On Friday, March 23, a new edition of the preparation and tasting of menus for children and young people with Cystic Fibrosis took place, in charge of the students of the haute cuisine course of the School of Hospitality of the Balearic Islands (EHIB).
For the seventh year in a row, the EHIB turns to the Respiralia Foundation and organizes a workshop of hypercaloric, healthy recipes, so that families have other options when it comes to feeding children and young people with Cystic Fibrosis. This disease, which affects the respiratory and digestive systems mainly, involves malabsorption of food and requires a diet that provides many calories in each dish.
During the academic year, the students of the Haute Cuisine Course study the characteristics and needs of the diet of a person with Cystic Fibrosis and propose attractive recipes from the teacher Sunilda Muntaner, the driving force of the workshop.
The assistant director of the school, Carmen Aguiló, welcomed all the attendees and commented that it was a pleasure to collaborate with the Respiralia Foundation and that she was proud of some students who volunteered each year to hold this workshop. On the other hand, Paz Arizti, on behalf of the Respiralia Foundation, thanked the EHIB and especially the teachers and volunteer studentes who made this workshop possible, in which each year new challenges were placed to make the recipes very caloric but as healthy as possible. The director of the school, Mrs. Maria Tugores, also went through the workshop to salute the attendees.
This workshop, included in the project of the Respiralia Foundation “Educate equals Health in Cystic Fibrosis”, is an important training for families, since it allows covering various nutritional aspects of the disease and, in addition, learning new recipes in a close and very practical way.
On this occasion, the students Daniel and David, helped by their haute cuisine professors from the EHIB, Pilar Pérez and Arsenio Fuentes, were in charge of preparing and presenting a workshop with recipes specially designed for the families of the Respiralia Foundation. The proposals presented, and tasted by children with Cystic Fibrosis and their families could taste, were:
Babybel cheese lollipops with three sauces
Squid soup
Chocolate and avocado smoothie
Chocolate crepes and fruits
